La Bio Idea's Greek olives come from a family business with their own organic olive orchards in the Kalamata region. The olives are matured for several months in salted water. For organic olives, it is a long and delicate fermentation process that determines the ultimate quality of the olives. Quicker methods with aggressive caustic solutions are used in conventional olives. The black Kalamata olives are more purple since natural methods are used instead of chemical products. The olives are not pasteurized but vacuum packed to keep the optimum delicious taste. The olives come pitted or non-pitted.
It is suitable for versatile use. Both for cold use in dressings and salads as for baking and roasting. And if you cook pasta does wonders a little olive oil in the cooking liquid.
